BEANs stew

Beans Stew and Boiled Ripe Plantain.

INGREDIENTS:

  • Black eyed beans
  • Palm oil
  • Onions
  • Ginger
  • Pepper
  • Salted fish
  • Tomatoes
  • Salt

Here’s a video that teaches you how to make beans stew:

PREPARATIONS:

  1. Soak beans in water for 24 hours.
  2. Boil beans for 1.5 hours, or until they become soft.
  3. Once the beans are ready, remove them from the heat and set aside.
  4. To a pot add palm oil; once oil is hot add chopped onions.
  5. After 5 minutes add salt fish.
  6. Stir
  7. Add pureed (blended) ginger and pepper.
  8. Stir.
  9. Add pureed tomatoes and salt then cook for 30 minutes.
  10. Once the sauce is ready, add the beans and cook the stew for another 20 minutes.
